An ambassador for fresh produce, this establishment is supported by a network of farmers who bring both freshness and proximity. The network extends to include the nearby employment centre, home to an organic market garden that collects organic waste from the kitchens for compost. The Chef also works side by side the primary schools and the CROUS (students’ representative body) to prevent young people being excluded from cuisine and to introduce them to different savours. An opportunity to share his passion for local products, and at the same time a few recipes too.
