Here, the ingredients have not traveled far: all are locally sourced (except the lobster, which comes from Brittany), and are on the whole organic. The vegetable garden provides an abundance of aromatic herbs and tomatoes, and the caviar is sourced from the neighbouring Pyrenees. An active partner in European Obesity Day, the property has even put its CO2 emissions on a diet, with floors that keep cool in the summer to eliminate the need for air conditioning and electric vehicles for the staff. Even the guests are also encouraged to cycle! The property is heated with thermal spring water, which then waters the gardens. All of which means a stay here is good for you, and also the planet!
