"To share a meal is to offer up a piece of my soul." My origins are in Cannes and Mougins, so it's important to me to promote southern cuisine by featuring local products. I use local farmers and I like to re-create the dishes I knew as a child to touch my guests' sensibilities with forgotten flavours. My cookery is modern, colourful and plentiful, to delight each guest's palate. I admit that I also have a weakness for Japan, and I like to garnish my dishes with a few subtle touches that remind me of my beloved travels."
