Since I’m passionate about nature, meeting people, and sharing, and especially because I’m a fisherman at heart, Belle Île en Mer naturally attracted me. The Castel Clara, a unique place facing the ocean, thus appeared an obvious choice for me. The richness of this terroir never ceases to stimulate my imagination, and it’s an honor for me to have you discover it through my cooking.

Energy conservation and preserving biodiversity: important lessons of island life.
Living on an island, is in itself a lesson in scarcity. Here, energy is a valuable asset that needs to be managed carefully. Heat pumps, programmable outdoor lighting and fitness equipment, sensors in public areas, remote control heating: an abstemiousness in energy consumption here is not just a nice idea. Nature preservation can be seen as much in the gardens rustling with local plants able to withstand the salty drizzle, as in the menu, which offers local, seasonal, often organic, produce and endeavours to respect the natural cycles of marine life.
