My dishes always tell stories, about a walk, a trip, an encounter, a childhood memory, or a scent. An evening meal of soup with pieces of cheese and bread becomes a chaud-froid of chestnut velouté with parmesan and truffles. The emblematic Savoie recipe of rissole, generally a dessert, is revisited as a savoury appetiser with a Vacherin cream. A snowball is transformed into a meringue shell... Not forgetting the mountain herbs, an incredible palette of scents and flavours and a unique source of inspiration!
