"Today, where everything moves so quickly, it is a real pleasure to watch our chef Rémy work with shad, a delicious fish native to the Loire. Time must be taken to remove every bone from the delicate fish with pliers, which takes some time, and many chefs would be disheartened by the task. Rémy also patiently awaits the shad fishing season to be able to share it with our clients. And there lies the beauty of our chef's cuisine: it is local and it is enhanced by his talent."

The small trails interlink; benches provide spaces for contemplation; the forest changes colour; buds open... we are even lucky enough to regularly spot majestic animals, such as doe and deer daring to venture into the hotel's surroundings! If you reach the end of the trail, the sight of the magnificent pond which comes into view is breathtaking, and you'll most probably be lucky enough to be welcomed by our couple of black swans who watch over these waters."
