"It's a pleasure to share with guests my passion for heirloom vegetables or atypical varieties that supply the kitchens of Chef Philippe Augé. Of the 50 tomato varieties that I grow, you will find the Osu, a black tomato from Brazil, the Green Zebra, a green tomato with yellow stripes, and the Trèfle de Togo, a fluted pink tomato. My favourite? The Canadian white tomato with its juicy white flesh. You will be able to find my vegetables prepared by the chef in the Garden Menu: tomato risotto with parmesan and young shoots or pressed garden vegetables, carrot top juice with cumin. I invite you to meet me in the garden at the bottom of the park. You will recognise me. I'm the one wearing the straw hat!"
"I am fortunate to have a job that involves interpersonal relations. I love to share my knowledge with customers. I am sometimes referred to as the master cheesemaker when I list the 50-60 cheeses of the famous cheese trolley, which come from France and abroad, made from goat's, sheep's and cow's milk. We prefer to surprise our customers with original cheeses, which are distinguished by longer ageing, served perfectly ripe, like this old 36 or 48 month Comté from Fort Saint Antoine in the Jura. The star here is the product! In order to introduce our customers to a range of flavours, without going overboard, we now offer a real Tour de France. So I hope you will keep some room at the end of your meal for cheese! "

Every Tuesday and Saturday, we like to share our vineyard knowledge with our guests at wine tasting meetings in the Cellar, based on specific topics and related of course to the nearby Burgundy vineyards. This immersion, involving a projection of geographical and geological maps on a plasma screen, helps unravel the mystery of the "Burgundy Terroir". How do Chardonnay and Pinot Noir, the two kings of Burgundy grape varieties, make such rich, complex and elegant wines? Their bouquet and their colour will hold no secrets for you!
