POETRY IN PERPETUAL MOTION

Every evening, the most famous of all Parisiennes slips into her sequined gown and shines forth in the City of Light: once per hour until dawn, the Eiffel Tower brightens up the night with a dazzling light show. As Balzac wrote, "Oh Paris! They who have not heard thy murmurs, between midnight and two in the morning, know nothing as yet of thy real poetry.” At daybreak, the rising sun reveals the elegant contours of the tree-lined avenues, the Pont des Arts spanning the Seine, the regal glass roof of the Grand Palais, the townhouses surrounded by flowerbeds. The markets proffer their stands brimming with the season’s produce, soon to grace the tables of the finest restaurants as well as the neighborhood bistrots where Parisians love to linger over lunch. Paris, capital of chic and glamour, cultivated, intellectual, artistic, gastronomic…

Its side streets and shady squares are abuzz with the sound of conversations drifting from the cafés, the city’s nerve centers, which can still transform into salons, breeding grounds for new philosophical or literary ideas. Paris’s secret is its capacity for rebirth. The Roman outpost called Lutetia was succeeded by the medieval city of Notre Dame, the Paris of the Revolution, and then the modern metropolis laid out by Baron Haussmann in the 19th century, with its architectural harmony and monuments built for the Universal Exposition of 1900. Today, the city continues to reinvent its districts, like the old storehouses of Bercy, La Villette and Les Halles, while retaining the sources of its charm: its canals and islands, its vineyard in the shadow of Sacré Coeur, its Roman arena, its cemeteries haunted by the famous figures who made Paris their own: Chopin, Modigliani, Molière, Jim Morrison…

Alléno Paris, Pavillon Ledoyen

Paris - France

Restaurant in town. By taking the lead at Pavillon Ledoyen, Yannick Alléno has made this historical property move another step forward on its way to modernity. Located at the lower end of the Champs Elysées, the property dates back to 1779, but the dishes shine through the creative energy of Yannick Alléno. The highly acclaimed chef has worked on sauces, the emblems of French cuisine, by providing them with depth and delicacy through his work on “Extractions”. His creations are marked by surprising subtlety, like the Bouchot mussels with cod Extraction and potatoes under a veil or the tender Wagyu beef with crispy ravioli, olives and green tomato jam. ... Le Grand Véfour

Paris - France

Restaurant in town. After more than thirty years of passion, sharing and inventiveness, Chef Guy Martin has created a cuisine which is like him, modern, sensuous and daring. A cuisine which associates pleasure and wellbeing, awakens the senses and creates emotions. Each dish is a masterpiece at this historic restaurant overlooking the gardens of the Palais Royal, frequented in the past not just by Napoleon and Josephine but also by Victor Hugo and Colette. The flavours of the world come together in grilled turbot and artichokes with pineapple-sage infused oil, or green pea ice-cream. ... Learn moreless

Le Pré Catelan

Paris - France

Restaurant in town. In the heart of the Bois de Boulogne, in the magnificent setting of a pavilion dating back to Napoleon III with ceiling friezes by Caran d'Ache, Chef Frédéric Anton, MOF (Best Craftsman of France) serves a cuisine which is both subtle and generous. He reveals the best of his ingredients, teasing out flavours and aromas: poached egg with a truffled tartlet and pig’s cheek melting in its spices. Chrystelle Brua creates the desserts, and breathes a touch of magic into great classic dishes such as Paris-Brest or pears Belle-Hélène. Your host will be Jean-Jacques Chauveau, awarded Best Maître d'Hôtel in the World 2013, for whom hospitality goes hand in hand with warmth and friendliness. ... Learn moreless

Le Taillevent

Le Taillevent

Paris - France

Restaurant in town. The Taillevent, a former mansion of the Duke of Morny, is both a living place and a way of life. More than a restaurant, it is the embodiment of French culinary arts in their most generous dimension, under the watchful eyes of General Manager Jean-Marie Ancher. Chef Alain Solivérès orchestrates a delicate symphony by interpreting the classics with modernity and elegance, like remoulade of crab with dill, spelt from the region of Sault in risotto, boudin of blue lobster. In this outstanding property the best pairings of food and wine are unveiled, when head sommelier Stéphane Jan allows you to travel through the wine list with its 2,000 French and foreign wine references. ... Lucas Carton

Paris - France

Restaurant in town. This historic restaurant in Place de la Madeleine has seen leading Chefs since the 18th-century. In succeeding Alain Senderens, Julien Dumas has carried on the tradition of accessible and democratised fine fining, constantly changing and striving for the ideal food-wine pairing. He serves a modern, inventive menu, open to exotic influences – his carpaccio of bream is inspired by Thai "Weeping Tiger" recipes and his Apicius duck (the signature dish created by Alain Senderens in 1970) now comes served with figs and liquorice. The restaurant boasts a unique Majorelle-designed décor, where the interplay of light and mirrors catches the reflections of the Église de la Madeleine. ... Learn moreless

Maison Rostang

Paris - France

Restaurant in town. Chef Michel Rostang celebrates 30 years of inspiration, taste and passion for fine dining. His cuisine is a reflection of his personality: simple and generous. Anyone who has visited his restaurant knows that his pairings of classical and modern flavours are indeed the epitome of perfection. His sole meunière with its shellfish marinière or the mythical pike quenelle à la Jo Rostang are just some delicious examples, not forgetting the exquisite hot tart with bitter chocolate. There is even a truffle sandwich, that you simply eat with your fingers. Rostang’s cellar, with more than 1,500 outstanding wines, is certainly one of the most prestigious in the capital. ... Marquis Faubourg Saint-Honoré

Paris - France

Hotel in town. Palais Garnier, Champs-Élysées, Louvre Museum, Place Vendôme... in the heart of the most enchanting Paris, a discreet porte-cochère, framed by two lanterns and topped by a mascaron ornament, marks the entrance to the Marquis Faubourg Saint-Honoré on rue d’Anjou. Architect Michele Bönan has succeeded in breathing new life into this 18th century private townhouse in which Marquis de La Fayette lived. Selected designs and photographs on the wall, unique furniture, elegant book-cases are some of the sophisticated details which ensure a cosy atmosphere. Passage 53

Paris - France

Restaurant in town. This is a very discreet address tucked away under the arcades in one of the oldest avenues in the centre of Paris. A tiny room with minimalist décor hidden away behind white curtains: what matters here is the food. No menu, you just wait and see what arrives on your plate. Veal tartare and oyster, foie gras poached with strawberry, white asparagus served with jamón serrano and Parmesan foam – the menu presents prodigious Chef Shinichi Sato’s latest creations elegantly served in the dining room by Guillaume Guedj. There is an exquisite, delicate, inventive cuisine which plays with colour and texture as much as with flavour, providing the ideal showcase for top-class seasonal ingredients. ... Learn moreless

Pierre Gagnaire

Paris - France

Restaurant in town. This restaurant has been given a makeover by Carolyn Quatermaine – collages, pages of books with printed lobsters, crayfish, artichokes and even recipes handwritten by Pierre Gagnaire’s father who was a cook. Fitting tribute to the important words of an extraordinary chef. Here is a Chef who lets his instincts take him directly to dizzying heights, who uses his emotions to make cuisine his means of expression, and allow him to speak in frank, yet subtle terms. A ‘Georges Teissier’ table for two (name of the street in Saint-Etienne where his first restaurant was located) has been set up in the kitchens, so that he can share some of his secrets with his guests. ...
