Château de Vignée, on the banks of the Lesse, is the bucolic setting chosen by Marius Bosmans to share his vision of the Ardennes over the seasons. While the pretty manor house and its 18th-century farmhouse were undergoing a facelift, the young chef took the time to cultivate his vegetable garden and forge links with local hunters. Game, vegetables, and so on. It is not exoticism he seeks, but the most natural way to make each ingredient shine. This sense of purity and simplicity is also evident in the discreet yet cosy atmosphere of the dining room as well as in the deep tones that colour the spacious rooms — contemporary echoes to the surrounding nature.
