“My creative process is reliant on two main motivating factors. The first is my passion to create every dish as the perfect companion to one of our selected wines, which themselves have been estate grown and handcrafted at Algodon’s winery in San Rafael, Mendoza. Second but not least, is highlighting the flavor, texture, color and shape of Argentina’s native products, manipulating these elements as little as possible, in order to achieve a unique signature of complex and memorable flavors.”
