"Being respectful of the origins of every individual ingredient that I use is of the utmost importance. Local availability, biodynamic growing practices, and deference to sustainability is always at the forefront of my mind. I want guests to feel comforted and satiated by the food they are consuming, but I also want to evoke a sense of wonder and curiosity. I strive for a level of perfection that may not even be achievable, but I will never stop pushing for it.”

On this extensive estate, organic farming and harvesting ingredients from local sources is a firm rule.
Picture a beautiful organic garden and tropical orchard nestled in a corner of the property, growing the fruits, vegetables and herbs used by the Chef and his team. The trees in the orchard bow under the weight of mangos, bananas, papayas and avocados, and the beekeeper carefully collects the honey from the bees. Organic produce is meant to be shared, which is why the hotel is a founding partner of Grow Some Good, an NGO that promotes sustainable organic farming in schools. Local Harvest, which unites small Maui organic producers, supplies freshly picked fruits and herbs that are hand crafted into juices and cocktails at the poolside bar.
