Nell’antica residenza del barone di Selys de Fanson, la cucina e le sale del ristorante hanno conservato i loro arredi originali, aggiungendo la raffinatezza del servizio offerto dal personale. Questo luogo combina i riferimenti del passato con la cucina contemporanea elaborata dallo chef e dalla sua brigata di talento, con ingredienti locali alcuni dei quali colti direttamente nell’orto della tenuta. E, quando il tempo lo permette, la terrazza esterna offre una cornice meravigliosa per il pranzo, la cena o uno spuntino.

In order to preserve it, Château St. Gerlach sees controlling and limiting the environmental impact and risks as a key responsibility of its management and staff. The Green Key guidelines provide the structural basis for this policy. Green Key is an international certificate which represents sustainability for companies operating in the tourism and leisure industry. The property has been awarded the Golden Green Key Certificate. This is the highest award and means that the property not only complies with the required standards but in fact exceed them. This work continues in parallel with growing and producing local products from the estate itself: sparkling rosé wine, fruit juices, fruit jams, honey, tending the orchard (with rare species that help to maintain biodiversity) and sourcing seasonal, local products.
