‘I have come to realize that like all other art forms, cooking is a vehicle for communication. If you look at a plate of food as a work of art, it can speak volumes. When I contemplate a finished dish, I feel as though I’m seeing it through 3-D glasses, while the rest of the world looks at it with bare eyeballs. Sometimes the plate is telling me more than I want to know.’
