Aaron cooks with great energy and flair, combining seasonal and local produce, ‘Rutland’s beautiful landscape yields the most fantastic ingredients, produced by a passionate group of farmers and artisans, rich pickings for enthusiastic foragers such as me, I’m always on the lookout for wild horseradish and mushrooms, sloes and elderflower (amazing when deep-fried in tempura batter and dusted with icing sugar), all of which are on our doorstep.
