For vegetables and herbs, its preference is for produce from the hotel’s own kitchen garden. However, its Alpine location valley makes short summers, and to make up the shortfall, the hotel buys other ingredients locally.When it comes to sourcing fish, Schlosshotel Chastè is especially careful. First, its chef ensures that menus are seasonal, a basic measure that helps preserve fish stocks. It also sources produce certified by the non-profit organization, Friend of the Sea, which helps support the preservation of marine habitats. Friend of the Sea now operates internationally, certifying products originating from sustainable fisheries and aquaculture. Audits are carried out on-site against strict sustainability criteria developed by the organization.
