My only goal is to make my clients happy. When they are happy, so am I. My cuisine gives pride of place to the region's various terroirs. To fully express these traditions, I rely heavily on my team, since each member provides a different piece of culinary heritage. Together we create dishes which represent a meeting between tradition and renewal, where you might discover new tastes or simply reclaim forgotten ones. By the end of the meal, we truly hope to restore to you a bit of Proust's madeleine - the taste that you have been seeking "in search of lost time".
