"My cuisine is imbued with Mediterranean lightness and has classic French cuisine as its foundation. I also add a pinch of flavourful adventure inspired by my culinary travels. Castello del Sole is one of the largest hotel estates in Ticino, southern Switzerland. It offers guests fine views of the Lake Maggiore, set amid medieval castles and soaring Alpine peaks.
The 150ha agricultural estate and farm, "Terreni alla Maggia SA cultivates a vast and exotic range of organic produce that is central to the hotel’s defining philosophy: "Flavors from our garden.” The farm yields wine, tea, corn, pasta, herbs, and rice, and boasts the most northerly rice field in Europe. For products not grown on site, the hotel works closely with local producers. It sources fish from boats operating on Lake Maggiore, local dairy products, and meat from a variety of assured suppliers in the surrounding valleys. The estate cultivates no less than 35 varieties of fruit and vegetables and 15 varieties of tomatoes. As a result, the dishes produced by its chef are of legendary quality: breakfast offers eight varieties of homemade organic jam, and the hotel’s risotto enjoys near cult status locally.
