In this former hillside monastery in Majorca, asceticism lives on in the décor, where white walls shine forth against the deep blue sky. The spa is a water and teakwood paradise using essential oils derived from the island flora. The swimming pool, a chic camping ground, provides large white parasols to ensure deckchairs remain in the shade. The rooms offer views of the sea, the olive tree orchards and the bay of Pollença. Organic produce, including olive oil, wine, citrus fruits and vegetables, is cultivated on the grounds and served in the restaurant. There is little inclination to venture out of this pleasant hotel, unless it is to head for the beaches or the golf course.

The essence of Mallorca at its most sophisticated. An eighteenth-century Jesuit monastery converted into a luxury hotel of contemporary design. In a rural setting at the foot of the Serra de Tramuntana, World Heritage Site, and near to the best beaches on the island. Here “local” is the key word. Whether it is a matter of the staff, the food or even the artisans and artists on display, this property has made itself the champion of local community life.

In the kitchens, the vegetables are local and organic produced in the garden when possible . Everything comes from the neighbouring island farms, and the fish is sourced from fishermen who have made sustainable fishing a principle. And everything is governed by a concern for biodiversity: the property is a member of an association that helps to protect local varieties of fruit, vegetables and plants. All these commitments account joining the Slow Food movement early on in order to raise awareness among guests of eco-gastronomy and conscious consumerism and inspire a new philosophy of culinary pleasure.
