Each day in my kitchen, I express my passion for what is beautiful and good, always preparing dishes with the best products that our region has to offer. These exceptional ingredients are taken from the mountains and rivers that surround us. My cuisine is a blend of tradition and modernity. Each day I seek perfection in the ephemeral expression of the best memories of my youth and the expertise that I acquired in my native land, the Basque Country.
