This property supports the local village and is one of the chief driving forces behind its development. Preserving an artisanal dairy, whose products can be found in a number of dishes from the menu, the Chef also advocates taste awareness in schools. An active member of the Raices foundation and the Down’s Syndrome association, it campaigns against social exclusion among immigrants in difficulty and the disabled.
