“You will always fall under the spell of the fresh Zeeland air.
Your soul smiles and you feel free from the pressures of daily life.
Now add to this the excitement of a meal at Inter Scaldes, and it feels like a celebration.
Manoir Inter Scaldes is a sturdy thatched-roofed villa in the middle of the polder. Its location is unique, between the Oosterschelde and Westerschelde, two of the four main inlets in Zeeland.
Thanks to high quality materials, art on the walls, warm tones, and the light-infused atmosphere make it feel intimate and homely.”
“Jannis Brevet is famous for his crustacean and shellfish dishes, and he thankfully uses that what the region has to offer. Gourmets from all over the world travel to the village of Kruiningen to sample the delicate flat Zeeland oysters and the rich taste of Oosterschelde lobster. The Zeeland countryside is also present in the dishes : Zeeland lamb, apples and pears from the many orchards, samphire and sea lavender from the salt marshes and game from the polders. He can express his creative side in the dishes. His favourite place is behind the stove, invisible, without a lot of fuss.”
“Jannis and Claudia are huge fans of the Modernists, the refined, minimalist art created after 1950, the post-war art, with a preference for abstract and geometric abstract works. What fascinates Jannis Brevet is the synaesthesia between art and cooking. Synaesthesia is the connection between observations and impressions from the different senses. The idea is that colours, lines, shapes and structures are inspiring for cooking. Red is warm, green is soft. ‘I don’t copy the images in my cooking, but they inspire me in a certain way’”
