Cooking is my passion: I relentlessly study and source excellent ingredients, respecting nature and the seasons. Through the prism of my southern origins - I grew up in Ischia - the products of Norcia and the history of this land lead me to make my dishes from a small number of ingredients which, through their harmony, create the identity of this unique place.
