I select my ingredients with meticulous care by focusing on small or very small producers, to shape a vision that also showcases techniques and the most modern combinations, respecting the most authentic and traditional flavours. Respecting the uniqueness of each ingredient, especially ingredients that have been forgotten, and creating something new without revolutionising makes the people who sit at my table happy.
