“The quality of a dish always depends on the quality of its ingredients: that’s why we use fresh regional produce whenever possible and cook them so as to maintain all of their nutritive properties. With this in mind, I love to rediscover forgotten ingredients, reinterpreting them with creative flair. My cuisine is light and simple, with immediately recognizable ingredients, and is deeply rooted in local tradition. My main objective is to convey direct and intense culinary sensations to my guests.”
