After meeting with diabetic children, Giovanni, the fourth generation in the Santini family to take over this property, decided to play an active part in awareness campaigns for children suffering from food-related diseases. He now shares the values of the property (flourishing in the South Oglio nature reserve), introducing the children to organic, local produce. In the kitchen, fine ingredients are prepared to their best and the leftovers used to feed animals on the estate or for compost to fertilize the soil in the vegetable garden, helping to grow the lovely vegetables served in the restaurant.
