My cuisine is inspired by cultural interaction, which I am constantly exploring. Up to 70% of the produce used in our dishes comes from local farmers and breeders, who I now count as friends; I then combine these local products with ingredients from regions around the world. Fascinated by Asian cuisine, I also draw inspiration from my American roots.
