"When I cook, my goal is to highlight the most authentic products of the Basque culinary heritage and sublimate without altering them. Fish from the ocean that has established the reputation of the port of St-Jean-de-Luz and which I add to the menu according to the day's catch - hake, sardines or cod, squid, Espelette chilli, lamb ... are real sources of inspiration. These high quality ingredients allow me to combine various flavours. Just like the establishment I work for, I strive to combine tradition and creativity and thus arouse each guest's senses by discovering the flavours of our region."
