"My greatest satisfaction in the kitchen is that my guests enjoy their meals. I love to share my passion with them, helping them discover new flavours. I adore revealing slightly disconcerting combinations such as Dublin Bay prawns with calf's foot, beetroot with bilberry, or a dessert of green peas or pepper. But my cookery is also about the simple things in life: a lightly grilled fish, a lovely fresh vegetable salad from the garden, bread just baked in the oven... The perfect amount of seasoning and just the right preparation. Nothing more. For me, one of the greatest rewards is when guests tell me they never ordered such-or-such a product because they didn't like it... And that this time it was delicious!"
