This restaurant has been given a makeover by Carolyn Quatermaine – collages, pages of books with printed lobsters, crayfish, artichokes and even recipes handwritten by Pierre Gagnaire’s father who was a cook. Fitting tribute to the important words of an extraordinary chef. Here is a Chef who lets his instincts take him directly to dizzying heights, who uses his emotions to make cuisine his means of expression, and allow him to speak in frank, yet subtle terms. A ‘Georges Teissier’ table for two (name of the street in Saint-Etienne where his first restaurant was located) has been set up in the kitchens, so that he can share some of his secrets with his guests.
