Home to a number of champagne producers, Le Domaine Les Crayères is one of the most expert providers of food and champagne pairings. Executive Chef Philippe Mille and Head Sommelier Philippe Jamesse work in close collaboration to create menus that highlight the style of a producer, paired with dishes specifically devised to emphasize their character. The cellar book lists over 1,000 champagne references, demonstrating the close ties that have been forged with both major Houses and young producers.
