Charente Maritime is my identity, my inspiration. The sea is my back garden. I seek to describe this place through seafood, such as these shade-fish, langoustines, and scallops, all from the ocean, which is then revealed before your eyes when you dine at our table.

Today Chef Christopher has been strongly influenced by his father's legendary culinary rigour on which he puts his own personal stamp.
