‘My great grandfather purchased this establishment, the first hotel outside of France to become a member of Relais & Châteaux. Today, I am the fourth generation of restaurateur’s at Auberge du Moulin Hideux. I went into cooking with the idea of one day taking over the family Auberge firmly in mind. In 1999, I began a culinary trip that led me to Jacques Thorel, Michel Bras and Michel Troisgros, the Netherlands and Italy. I finally came “home” in 2005 to take advantage of what life has to offer here; Belgium has so many unexpected pleasures.’

Hotel and restaurant in town. Only 50 metres from the Place du Marché, this fine 19th century building is the ideal starting point to explore on foot, by carriage or boat the historic, mythical and romantic town of Bruges, its museums and boutique. On returning to the Heritage, relax in one of the guest rooms with their unique, sophisticated décor or in the comfortable lounge bar, Le Magnum. To savour local cuisine, head for Le Mystique restaurant, with its charm that has remained intact since 1869, where you will be privy to the delights of a 14th century wine cellar. The vaulted fitness room has also been wonderfully preserved and dates from the 12th century.

Delft earthenware
Since the late seventeenth century, the blue earthenware of Delft has occupied a prominent place in the world of pottery. The countless pieces produced here now grace museums all over the world. Until the reopening of the Lambert van Meerten Museum with its exceptional pottery collection, you can take a tour organised by the prestigious Royal Delft factory, founded in 1653 and still operational.
The windmills of Kinderdijk-Elshout
Built in the mid eighteenth century in order to drain the polder, the Kinderdijk Elshout windmills have been recognised on the UNESCO World Heritage list since 1997. The nineteen windmills illustrate a part of the country’s history: from peat extraction to farming, as well as the terrible floods of the last centuries. In the winter, I come here with my family to skate on the Nederwaard and Overwaard canals.
Restaurant in town. In the town of Reet, a few kilometres south of Anvers, you’ll find the bastion of Belgian gastronomy: Pastorale and chef Bart de Pooter with 2 Michelin stars since 2006. Here, the chef creates very personal, avant-garde, extremely skilful and imaginative cuisine that borrows as much from traditional Flemish cuisine as it does from Asian cuisine. Voted Chef of the Year in 2012 by Gault & Millau, he describes his cuisine as a biotope in which flora, fauna and water are prolific. Where oyster and celery are used to create a delicious union, sea urchin and fennel provide an echo in a studied pictorial composition. In the dining room, design reigns supreme with wooden sculptures creating the perfect setting for this exquisite cuisine.

A small café-theatre in the antique-sellers quarter, where Huguette Van Dyck has been providing opportunities for up and coming talent since 1985. Try the toasted menu items or snacks before or after the performances. This beautiful vaulted cellar dating back to the 17th century has had its “service to the public” recognized.
Le Moeder Lambic, Bruxelles
You’ll find one of the best beer bars in the world on Rue de Savoie, with more than 800 items on the menu. A locale that will please lovers of both hops and comics (a large selection is available to read).

One of the nicest Sunday markets in Belgium. There was a grain market here as early as the 17th century. Today, people come to buy artisanal cheeses (taste the Herve), free-range eggs, local charcuterie and sirop de Liège, made from pears, apples and dates (our own sort of Proust’s madeleine).
Hotel and restaurant in the woods. The Relais & Châteaux spirit holds special significance at the Moulin Hideux. In 1960, the magnificent 17th century mill, set in the heart of the Semois Valley, became the first Relais & Châteaux member outside of France. Family spirit is also of great importance here; the hotel has been handed down from generation to generation of the Lahire family. Look forward to long walks in the forest, a few strokes in the heated pool, an aperitif by the crackling log fire or in the shady garden next to a babbling brook, topped off by Julian Lahire’s delectable cuisine. Each guest is welcomed into the family fold so heartily, that it becomes very hard to leave.

Over twenty years ago, an old surgeon purchased this beautiful mill that has been in operation and producing stone-oven bread for almost six centuries. The mill still grinds its own flour, producing tasty results. They also provide us with all of our Belgian bread.
Lunch in Bastogne
Enjoy lunch in a coach reminiscent of the Orient-Express. Léopold Bertholet’s family has been providing this pleasant stationary voyage since 1946 when they purchased a tram wagon. Our family often comes here for a simple bouillabaisse or the excellent eels.

A panoramic route
River and forest; magnificent platforms offering exceptional views. We’re surrounded by oak and beech in the ancient Duchy of Bouillon. Follow the road and wind up to discover the Belvédère, the Giant’s Tomb or the panorama from Rochehaut. From Bouillon the road keeps on going until Luxembourg.

Le Place d’Armes is a charming hotel on the place d’Armes, the historic heart of Luxembourg, a meeting place in summer and winter, close to the “Cercle Cité”, the business and pedestrian shopping district. Past and present are perfectly balanced in the 18th century building, which skillfully blends Art nouveau, a revisited Baroque and contemporary styles. Each of the guest rooms and suites is decorated in a delicate colour palette and has its own style and charm. The gourmet restaurant La Cristallerie focuses on exceptional products and the Plëss has the charming atmosphere of a chic brasserie, whilst the renowned Café de Paris is marked by a bistro atmosphere.
