Story of a Chef

How did you become a Chef? (was it a vocation, something in your childhood?)

I started cooking when I was 7. In year 2000 moved to london to follow my dreams to became a professional chef.

How would you define your cuisine? (your influences, people you’ve met, your travels, etc.)

Creative using quality local product when possible and sustainable! Modern European with Asian influence -  gourmet experiences from my travels.

What are your favourite products and criteria for choosing?

Seasonal and local products at its prime, small producers, local food markets …

What is your signature? (ethos, dish, menu)

Quality, consistency, constant evolution!

Do you have a Chef’s tip for Sunday cooking?

Roast the part boiled  spuds with lard,  duck fat or beef drippings to achived a amazing sunday roast spud !
