In the UK & Ireland Michelin Guide 2018 Niall was recognised with a Michelin Star for his innovative and imaginative cuisine in The Dining Room.

“My arrival sees a new phase for the dining experiences at Whatley Manor.  In The Dining Room, where my tasting menus have been inspired by my world travels, you can expect Korean and Japanese with British flourishes.  Whilst in Grey’s Brasserie our focus alongside head chef George Dingle, is on offering our guests British comfort classics. The Green Room is our new social dining space for private parties and foodie events from around the globe. I like to challenge myself creatively and to keep myself on my toes, combining local produce with producers from further afield. We are also fortunate to have walled kitchen garden, so one of our initiatives is working with head gardener Andy Spreadbury to ensure we have crops of vegetables that we can use on the menus.”
