Eclecticism. Both a state of mind and a way of doing things. My career so far is evidence enough of this – the awakening of my interest in cooking with my mother and a diploma in culinary arts from Sookmyung University; a degree in management and a masters in child psychology; management of the kitchens of a Korean Grill in New York, of a traditional diner in Seoul and then of a modern gourmet restaurant in the same city... Si Wha Dam is a marriage of arts and gourmet cuisine. It epitomises good taste and… eclecticism.

What is your Chef’s secret to preparing your star ingredient?

All our menus are accompanied by white lotus flower infusions. Our “Meditation Menu” looks, by the way, like an open lotus flower on a pond. It includes a roll of lotus rice served in a white lotus leaf and a bit of tea fermented with silt (loess). One of our signature dishes lets our guests discover all the parts of the plant: the flower, leaf, stem, root and seeds. Lotus is a product that we are keen to develop and let as many people as possible discover…

Tell us about your star ingredient.

Summer is the lotus flower season. During this period we receive them from Muan, in the province of South Jeolla. Lotus is a very healthy ingredient from the root to the flower. Although it grows in muddy water, this beautiful herbaceous plant produces fragrant flowers that illuminate their environment. Both pure and noble, its image reflects the philosophy of our cuisine.
