"By opting to create an architectural vegetable garden, I have taken my quest for the good and the beautiful one step further. I have chosen to always give pride of place to the flavour and beauty of fresh products that the earth offers up when it is well taken care of, and to bring these delights into the luxurious setting of this haven of peace. I intend on providing my guests with an invitation to awaken their senses and on creating a harmony between nature and man. This passion enables me to show and explain - to the most curious guests - the virtues and secrets of the flavours they will be savouring in the dishes.

The wall lamps are Jules Wabbes classics; the mirrors were designed by Gio Ponti; the photographs are the work of Hervé Charles and Frank Kristen; the chandeliers were created by Vicenzo Decotiis; and we specially commissioned Louise Eliot to make the ceramic pebbles that dot the tables. In the last few years, I have worked with Nelly Smets to give the establishment a whole new look."
