The Ring Hotel’s theme of relaxed elegance is personified in its restaurant, At Eight. Its award-winning menus showcase traditional Viennese cuisine and uses regional produce of the highest quality.
Wild fish features strongly on At Eight’s menu, which the restaurant sources from the family-run Eishken Estate. From small beginnings, the business has grown by focusing on outstanding-quality, sustainably-caught fish. It sources supplies from small fishing boats that are at sea for no more than a day—minimizing the time from “ocean to table.” The restaurant’s vegetables are supplied by Waltraud and Michael Bauer’s organic farm some 12km away. Their extraordinary range of vegetables and herbs has seen them become one of Austria’s most sought-after producers. Yet, they retain close links to their customers, with vegetables often personally delivered for inspection by chefs. Naturally, At Eight’s organic offering also includes Vienna’s celebrated breads, which are supplied by the Öfferl Organic Bakery, a family business in Gaubitsch, north of Vienna. The bakery has pursued a return to artisan methods, using rare grain varieties, 100% organic ingredients, and handmade techniques.
