The soul of this establishment comes from its "eat local" and "build local" philosophy. A hunter, gatherer and gardener, Emmanuel Renaut scours forest paths and mountain pastures to find mushrooms and herbs with which to treat his guests. For those who feel like discovering the flora and fauna for themselves, the chef is happy to take guests along with him, explaining why he is concerned about protecting the chamois, deer and fish. He also enjoys taking the time to talk with his suppliers, all local. And back at the property, he will animatedly tell you where the materials were sourced for the house. Here too, everything is local: from the stone to the wood, via the flowers in the garden.
