We are thrilled to welcome Jorge Nunes from Symington Family Estates to share his knowledge and to present a selection of fine wines from the Douro Valley, including premium ports from Graham’s, to complement the cuisine of our guest chef. New Zealand-born Analiese Gregory worked in many of Europe’s most prestigious kitchens before settling closer to home in Sydney. She spent five years alongside Peter Gilmore as sous chef at Quay, followed by time at ACME, and its off-shoot, Bar Brosé. Analiese’s latest move has been to embrace life and food in the country in Hobart, Tasmania, where she heads the kitchen brigade at the highly acclaimed restaurant, Franklin.
