Grand Chef Georges Victor Schmitt serves up surprisingly sensuous cuisine. His unforgettable foie gras is highly appreciated, as well as his fresh sea fish, truffled blue lobster and the full repertoire of local game, combining the best of tradition and modernity. His renowned gourmet breakfast with foie gras and truffle brouillade and seasonal dishes delight the eyes and above all the taste buds. They can be savoured during mild weather in a magnificent shady garden, or by a fireplace during the winter in this history-steeped setting where the Soldiers of Year II, celebrated by a famous poem of Victor Hugo and the works of Erckmann & Chatrian, the neighbours from Phalsbourg, met. On the doorstep of the vineyards of Alsace and the mysterious Vosges, the chef has turned this inn with its imperial rooms into a unique gourmet experience in this historical city.
