Everest, his restaurant, is on the 40th floor of the Chicago Stock Exchange, and has large bay windows with breathtaking views of the city below. Joho endlessly reinvents the great classics of French cuisine. He combines products like foie gras or caviar with the humble potato and turnip to create delicious surprises. In honour of Joho’s homeland, wines from Alsace star in many of his recipes, such as Maine scallops with Belgian chicory, Melfor and Gewurztraminer.
