Wood, glass, sleek design: a simple but welcoming décor, in tune with the cheerful atmosphere of this restaurant, which concentrates first and foremost on the food on the plate and has built up a clientele of regular customers. David Picco, Ecuadorian Chef who joined Zazu after spending the first years of his career in France, serves contemporary cuisine with Latin American influences, mainly based on local ingredients. He works very closely with farmers, grows vegetables in the restaurant's greenhouses and selected his own team of reliable fishermen on the coast. The cellar, with its spectacular 25-foot high ceiling, is one of the finest in Ecuador.
This summer pavilion, dating back to the Belle Époque, is tucked away in the heart of the Barranco district, a protected historic area next to the Pacific Ocean. Marble, exotic woods, a beautifully columned white façade, open balconies and skyhigh ceilings lit by skylights in the roofs – Lima teatinas – give it a charm all of its own. Its renovation was entrusted to sculptors from the Fine Arts Academy and to an Italian cabinetmaker with a view to preserving and showcasing its rich architectural heritage. Hotel B draws its inspiration from the Bohemian atmosphere of the surrounding district and exhibits works by contemporary Peruvian artists, adding to the hotel’s character.

In the heart of Uruguay’s most exclusive seaside resort, Chef Jean-Paul Bondoux has recreated a piece of his native Burgundy. In a quiet residential area of Punta del Este, surrounded by a magnificent garden, Bondoux produces authentic French cuisine using products from his own farm, like zucchini flowers stuffed with chicken or roast rack of lamb in garden herbs. “My cuisine is close to the land,” Bondoux says. “I love thyme, rosemary, garlic, onions, tomatoes – everything that comes from the earth.” The boutique next to the restaurant pays tribute to the terroir of France with brioches, croissants and cheeses that can’t be found anywhere else in Uruguay.
