Soak up the history and savour the exquisite cuisine at Restaurant Kong Hans Kælder. Established by the Groenlykke family in 1976, the restaurant is located in the oldest cellar in Copenhagen dating more than 700 years back, erected during the reign of Danish monarch King Hans, and once the residence of legendary author Hans Christian Andersen. Vaulted ceilings and soft lighting create an intimate atmosphere. An open kitchen invites guests to observe chef Thomas Rode Andersen while he crafts such signature dishes as his Roasted Black Lobster, served with delicate white asparagus and accompanied by an asparagus-lobster mousse with a superbly light and frothy asparagus sauce. Classic French cuisine has been paired down to respect a new-found desire for simplicity. Superb ingredients, such as the freshest shrimp from the Fjords or turbot from the North Sea speak for themselves.

It was on the island of Fyn, “the garden of Denmark”, that Hans Christian Andersen was born, and it has now been immortalised through his fairy tales. Today in Millinge, a small village on the island, there are other tales being told, notably that of a man who makes his recipes into true Scandinavian legends. At Grand Chef Per Hallundbaek’s table, the salmon is smoked on site and the turbot comes with vegetables and herbs grown in the kitchen garden. Upstairs, guests can stay in small loft rooms with white brick walls, minimalist décor and soft lighting. At Falsed Kro, in the land of the aurora borealis, no one will be needing The Sandman’s help to have beautiful, sweet dreams.
