Thomas Keller’s technique has become so famous that Pixar studios called upon his expertise when making the film Ratatouille. You may not get a chance to taste it in his restaurant “The French Laundry” but the revisited ratatouille served at the end of the film is his invention. At the heart of Napa Valley, this chef, who also wows New York with his Per Se restaurant, has created one of the best tables in California. Working closely with Chef de Cuisine Timothy Hollingsworth and the best producers in the region, he and his team concoct voluntarily minimalist dishes, where products such as oysters and truffles are savoured in a series of scripted mouthfuls. The idea behind this “sequencing” of the meal is to multiply the surprises, in a restaurant that renews its menu… every day. Don’t be surprised by the freshness that bursts in your mouth: the herbs and vegetables are straight from the garden.

It was in front of the stunning scenery of Big Sur that Henry Miller said that he learnt to pray. To take the time to meditate in front of the immensity of these cliffs which seem to plunge down into the ocean, the little village of artists of Carmel-by-the-Sea is the ideal base. Halfway between San Francisco and the coast of Santa Barbara, inhabited by seals, whales and other marine mammals, the village - where Clint Eastwood was once mayor - will charm you with its many art galleries and pebble beaches. You will drop your bags at a romantic hotel built in 1929. The interior designer Kathleen Fink has decorated it with the most beautiful antiques and fabrics from Europe. Delicious cuisine, a wine cellar with over 4,500 bottles, massages and a short stroll to Carmel beach will give this address a special place in your heart, in the footsteps of the author.

The trademark of Patina is fresh seasonal products highlighted by sophisticated presentations. The flavours are distinct in each dish, sweet or salty, but are always magnified out by herbs, exotic spices or bursts of acidity such as in the grilled Scottish salmon with baby artichokes and blood orange, or the Mediterranean loup de mer with minestrone and pesto croutons. The caviar guéridon and the variety of cheeses are two other reasons to visit this prestigious address.
