Only 50 metres from the Place du Marché, this fine 19th century building is the ideal starting point to explore on foot, by carriage or boat the historic town of Bruges. Mythical and romantic, Bruges is the perfect place to spend a few days unwinding in restaurants, museums and elegant boutiques. On returning to the Heritage, relax in one of the guest rooms with their unique, sophisticated décor or in the comfortable lounge bar, Le Magnum. To savour local cuisine, head for Le Mystique restaurant, with its charm that has remained intact since 1869, where you will be privy to the delights of a 14th century wine cellar. The vaulted fitness room has also been wonderfully preserved and dates from the 12th century.
A few kilometres from the city of Maastricht, you will find this charming inn in an exceptional setting, on the doorstep of Hoge Kempen National Park. This beautiful estate with its idyllic patios, lakes and exclusive garden suite, creates the perfect setting for a discrete hide away. Staying here is a return to the romantic era of the knight Sir Lagasse de Locht, for whom the hostellerie was built in 1924. The rooms are decorated in the French rustic style and the elegant restaurant La Source, with its secluded terraces, offers exquisite cuisine. The in-house spa “Aquamarijn” was voted the best in Belgium.
The Relais & Châteaux spirit holds special significance at the Moulin Hideux. In 1960, the magnificent 17th century mill, set in the heart of the Semois Valley, became the first Relais & Châteaux member outside of France. Family spirit is also of great importance here; the hotel has been handed down from generation to generation of the Lahire family. An Italian in Luxembourg and not just any Italian. Originally from Lombardy, Grand Chef Ilario Mosconi has taken his country’s culinary reputation to new heights. The key to his success can be summed up in one word: authenticity. “From Tuscan beef to veal from the Piedmont, not to mention Sicilian tomatoes and white truffles from Alba, 90 per cent of his products come directly from Italy”, explains Ilario’s wife Simonetta Mosconi, who takes the same care over the restaurant and the guests that Ilario does of his cooking. Discover what can be done with simple products like basil and ricotta at this establishment on the banks of the River Alzette, with its magnificent eight-course set menu of pasta dishes.

‘Delight and Tranquility’ (in Dutch ‘Vreugd & Rust’) is the name of the estate at Savelberg, located just five kilometers from the Hague. You will certainly be delighted by the elegant mansion and enjoy the tranquility of its magnificent grounds, with its ancient trees and well-tended gardens. The wind blowing in from the coast carries the scent of the sea air, a reminder that the beaches are very close by, and sometimes even brings with it a few grains of sand stolen from the bunkers of the neighbouring golf course. The delicate lobster salad Savelberg prepared at the table of the Savelberg’s restaurant for more than twenty years, offers a fusion of flavours. Dining on the terrace while admiring the lovely view of the garden and the Vliet river will heighten this sensory feast. The rooms, decorated in shades of lavender or peach, are like the dishes: colourful and eloquent.

It took considerable daring to convert a prison dating back to 1739 into a prestigious hotel, but Jonnie and Thérèse Boer have succeeded in creating a very special atmosphere in the heart of the Hanseatic city of Zwolle. Each of the rooms and suites crafted from the old cells features a sophisticated design. Enjoy an evening full of culinary adventures in Restaurant Librije’s Zusje where the kitchen is inspired by the philosophy of Grand Chef Jonnie Boer. In the spring and summer the butlers take guests to the Restaurant De Librije on one of the little boats named after the children of Jonnie and Thérèse, Jimmie and Isabelle. Like the hotel, this 16th century former convent is full of surprises. Jonnie Boer is definitely a free-wheeling chef and his imagination is truly unfettered.
Located amidst elegant vistas of landscaped gardens, a golf course and old trees in a private forest, the 100 hectare estate of Kasteel Engelenburg offers unforgettable excursions in this beautiful region. This 19th century castle is a historical monument, with hand-carved fireplaces, high ceilings, period furniture and sumptuous suites that evoke the splendour of bygone days. The restaurant, in a 19th century conservatory with a tropical atmosphere, is an absolute delight, as are the lounge with its collection of 300 Scottish Single Malts, the medieval wine cellar, the pretty rooms and the sumptuous décor of the suites.
The nearby shipbuilding industry was the inspiration for the décor of the dining room overlooking the harbour. Here, in this modern setting, Grand Chef Margo Reuten pays as much attention to welcoming her guests as she does to the quality of her cuisine. She is perfectly happy to serve her tables herself and to let her guests watch her work in a kitchen which opens on to the dining room. She delights in sharing her enthusiasm. She chooses her ingredients with great care and treats them with delicacy, serving inventive dishes inspired from classic recipes, such as North Sea turbot with truffles and potatoes, and tomatoes with balsamic vinegar and hollandaise sauce. The service, the presentation of the dishes and the pairings of wines and food are in every way on a par with the cuisine.

On the edge of the beautiful Sonian forest, Grand Chef Pascal Devalkeneer achieves the perfect balance between traditional and avant-garde concepts. This talented chef’s cuisine is well-thought out and beautifully executed. Inspired by what’s in season, he produces artfully presented dishes that delight the senses. Succulent baby lamb from the Pyrenees roasted with garlic and rosemary is a perfectly paired with “di Firenze” aubergine and tamarind. Delectable Per Se caviar and broccoli flowers, Parmentier style, enhance the special Gillardeau oyster tartar. Sample these creations in the atmospheric restaurant with soft lighting and modern décor or on the leafy terrace with its borders of aromatic herbs, which is a wonderful place for “al fresco” dining. The knowledgeable sommelier presents wine from both French vineyards and further afield that is in harmony with the gourmet offerings.
Le Place d’Armes is a charming hotel on the place d’Armes, the historic heart of the city of Luxembourg, a meeting place in summer and winter, close to the “Cercle Cité”, the business and pedestrian shopping district. Past and present are perfectly balanced in the 18th century building, which skillfully blends Art nouveau, a revisited Baroque and contemporary styles. Each of the guest rooms and suites is decorated in a delicate colour palette and has its own style and charm. The fine dining restaurant La Cristallerie, with its Art nouveau stained glass windows, offers classic French fare in tune with the seasons, while the second restaurant, the Plëss, has the charming atmosphere of a Parisian brasserie.

Set in the Dutch idyll of Giethoorn, a village built on canals, Grand Chef Martin Kruithof and his wife Marjan de Jonge make it their mission to spoil their guests. De Lindenhof is a thatched-roof farmhouse surrounded by the loveliest of English gardens, where Martin Kruithof creates his classic but inventive cuisine, allowing the flavours of the ingredients to speak for themselves. The cellar is stocked with an exceptional selection of wines, and the wine-room has a cosy environment in which to enjoy an aperitif. Seasonings come from the Lindenhof’s own herb garden, right on the kitchen doorstep. On sunny days, dine on the terrace overlooking the delightful garden and canal. Enjoy a delicious picnic on the restaurant’s riverboat, which can be hired with a captain to tour the picturesque canals. To complete the experience, stay the night in one of the Lindenhof’s two spacious suites.
The Sörensen family warmly welcomes guests to the estate of Het Roode Koper, a mansion once owned by the Count of Dutch-Indonesia. Surrounded by classical English gardens and the lovely woods of the Veluwe, one of the Netherland’s most beautiful and varied landscapes, the 3,000 hectare estate is a wonderful destination for a restorative getaway in an elegant and comfortable setting. Unwind with a round of tennis, a leisurely stroll in the gardens, or a few refreshing laps in the pool. Explore the woods, heaths, water and wilderness by foot, bicycle or horseback – guests can even stable their horses on the premises. On cooler days, curl up fireside with a spot of tea or a glass of wine in the lounge of the main villa. The restaurant offers excellent seasonal fare, which, on sunny days can be enjoyed on the delightful terrace with views of the stately garden.
The St. Gerlach Estate is tucked away in the unspoiled natural environment of the Geul Valley and the Ingendael nature reserve. With its own extensive parks, vineyard, herb garden, orchard, rose garden, and its church with splendid 18th-century frescoes, the Château’s setting is utterly delightful. The historic buildings date back to the year 1200 and was once a monastery built to accommodate pilgrims who had come to pay homage to hermit Gerlach of Houthem. The guestrooms, housed in the former farmstead, boast views of Baroque gardens. The spa and the Roman indoor swimming pool offer treatments and relaxation. The restaurant which has lost nothing of its aristocratic décor, serves fine French cuisine, while the Bistrot de Liège offers to the guests appealing dishes from the region in an informal setting.
