This exquisite 16th century colonial manor was one of the first Spanish buildings in Cusco and is located just steps away from the picturesque main square. Once occupied by the conquistadors of Peru, it is now an exclusive boutique hotel that has been carefully restored to retain its historical heritage and décor. In the heart of Uruguay’s most exclusive seaside resort, between pine forests and sandy beaches, Grand Chef Jean-Paul Bondoux has recreated a piece of his native Burgundy. In a quiet residential area of Punta del Este, surrounded by a magnificent garden, Bondoux produces authentic French cuisine using products from his own farm. “My cuisine is close to the land. I love thyme, bay leaves, sage, rosemary, garlic, onions and tomatoes – everything that comes from the earth.” His courgette flowers stuffed with chicken and virgin olive oil, and his rack of roast lamb in garden herbs are deliciously fresh. In the boutique next to the restaurant, tribute is paid to the terroir of France, with brioches, croissants and cheeses that you won’t find anywhere else in Uruguay.
Alexandra Marnier Lapostolle, great-granddaughter of the creator of Grand Marnier, has chosen to develop the project Viña Lapostolle in Chile. This restaurant was founded 18 years ago and is managed today by Diego Muñoz. It epitomises Gastón Acurio and Astrid Gutsche’s dream of sharing their contemporary take on Peruvian cuisine with the entire world. Astrid & Gastón’s cuisine draws its inspiration from the traditions and the biodiversity of Peru, and yet never breaks its links with the world around it, responding first and foremost to the challenges posed by the future and by our environment. A living experience with a hint of magic and sensitivity.
The lush vegetation of the five hectares of tropical gardens unfolds before you at the foot of the citadel of Machu Picchu, in the heart of the cloud forest. Marked paths invite you to explore this paradise of ferns and orchids, of which the estate boasts one of the finest collections in the world, not to mention the many species of birds and butterflies. A little further on, the sacred Inca sites and their secrets await you. After a day spent exploring, it is a delight to come back to the comfort and genuine charm of the villas, enjoy sitting in front of a warm fire and the natural treatments inspired by the spirituality of the Andes in the spa, or taste a “quinotto” (a “risotto” made from quinoa) at the restaurant overlooking the river.
