  • Franck Reynaud - Hostellerie Du Pas de L’Ours

    Crans-Montana, Switzerland 

    Skiing on the world-renowned slopes of Crans-Montana is not the only pleasure in store for you at this delightful chalet. The suites and junior suites have open fireplaces, jacuzzis and views of the snow-covered mountain peaks, and the chalet has a Spa. The beautiful interiors feature wood and stone walls. Everything here is truly charming, especially the painting of Felix, Pas de l’Ours’s former resident donkey. In a cosy atmosphere, the Bistrot des Ours gives pride of place to local flavours, whilst in the gourmet restaurant the chef invites you to savour a selection of vegetables, milk-fed lamb, bass, sea bream, mullet, venison and other culinary treats.

    Vienna, Austria 

    Palais Coburg, in the heart of Vienna, offers a superb ultra-comfortable ambiance for you to enjoy. Each suite is decorated in honour of one of the high-society families that have marked the history of this somptuous hotel which, since the 19th century, has provided one of the most prestigious venues for receptions in the capital. The view from the spa over the roofs of Vienna adds the finishing touch to your superb feelings of relaxation. The gourmet cuisine of Silvio Nickol and the Basteigarten restaurant – “an oasis of green” – make Palais Coburg the top spot for culinary delicacies, and the cellars boast 60,000 bottles – one of the largest stocks of Mouton Rothschild, Château Yquem and Pétrus in the world. The magnificent ballrooms with all their festive splendour, the elegant lounges, and white vaulting of the former casemates, provide the perfect setting for private functions.

    It was in front of the stunning scenery of Big Sur that Henry Miller said he learnt to pray. The little village of artists, Carmel-by-the-Sea, is the ideal base to marvel at these immense cliffs that seem to plunge down into the ocean. Halfway between San Francisco and the coast of Santa Barbara, inhabited by seals, whales and other marine mammals, Carmel – where Clint Eastwood was once mayor – will charm you with its many art galleries and pebble beaches. This romantic hotel was built in 1929 and is ideally located in the heart of the village, and a pleasant short walk away from the famous Carmel Beach. Interior designer Kathleen Fink has decorated the hotel with the most beautiful antiques and fabrics from Europe. Delicious cuisine, a wine cellar with over 4,500 bottles and the superb massages will give this address a special place in your heart.

  • Philippe Vételé - Anne de Bretagne


    On the sand dunes, facing the charming port of La Gravette, Anne de Bretagne is a contemporary villa with striking Jade Coast architecture, perfectly placed to enjoy the best of Brittany. There are breath-taking views over the ocean from the suites and the Italian-style terraces. In the excellent restaurant, Philippe Vételé’s cuisine is inventive with a touch of the sea, in perfect harmony with the wines selected by Michèle Vételé, a highly-recognised sommelier. In season, you can try wild clams with shredded leek, with white Muscat vinaigrette sorbet. Fish and shellfish create a perfect match: “slow-cooked” line-caught sea bass is served with a sardine concassé, a string of winkles and a sea lettuce emulsion.

    A wonderful mountain landscape provides the backdrop to this beautiful inn, which has retained the typical style of the Engadine over its 450 years. The new buildings blend in harmoniously, with their modern lines clad in natural wood inspired by the surrounding pine and larch forests. The spring-water organic pool is located on a small plateau directly in front of the hotel. This peaceful, silent and hospitable spot is the work of a family whose members have, for several generations, coupled their complementary talents perfectly to each other.
