Australia, New Zealand, Fiji, Polynesia… The diversity of Oceania, a mixture of vast open spaces and tiny atolls, is what makes it what it is. Australia can be proud of its airy cities (Sydney, Melbourne, Perth…), its vineyards and its Pacific Coast, fringed by its magnificent Great Barrier Reef.
This country has the bush at its heart, symbolised by the legendary Ayers Rock. New Zealand, which is smaller, has many surprises on offer with unspoiled landscapes (Southern Alps, fjords, volcanoes) and an Anglo-Saxon culture with a Maori cultural heritage. The Pacific Islands are a paradise for relaxation. A tropical climate and lush vegetation against a backdrop of turquoise blue lagoons make Fiji and Tahiti (French Polynesia) the perfect location for a relaxing, sunny holiday.
It is just a short crossing from the main Fiji Island to Dolphin Island, a tiny private island with lush green vegetation surrounded by the crystalline waters of the South Pacific. Three terraced pavilions, tucked away amongst the palm trees, form a harmonious ensemble in the shade of their palm-thatched roofs. From a delicate sashimi of kingfish with black bean and orange to a chocolate pave with cinnamon twigs, Tetsuya is inspired by flavours of Japan, French techniques, and an abundance of extraordinary Australian produce. Set on 6,000 acres near Matauri Bay, Northland, The Lodge at Kauri Cliffs offers spectacular 180 degree views of the Pacific Ocean, and overlooks a championship golf course. At the heart of a 19th century Victorian estate, Otahuna Lodge seamlessly knits past and present together: period woodwork, stained glass windows and fifteen working fireplaces combine with a host of modern comforts and a rich collection of contemporary New Zealand art. Outside, Otahuna, which is Maori for little hill among the hills, has striking views over the Canterbury Plains and the Banks Peninsula. The song of native bellbirds invites guests to discover hidden glades, ponds and more than 120 different kinds of organic fruits, vegetables, nuts and mushrooms in the historic gardens.
Set against a backdrop of the Southern Alps, Whare Kea Lodge appears to float above Lake Wanaka. A sojourn in the superbly comfortable guest suites is enhanced by the refined cuisine produced by our chef who uses the finest local seasonal produce. Leisure diversions include salmon and trout fishing, cycling, walking, and exploring the celebrated vineyards of the Central Otago region. On splendid, mysterious Lake Wakatipu, the cradle of ancient Maori legends and one of the most serene landscapes in the world, Matakauri Lodge offers stunning views of the mountain ranges. Each of the beautiful suites has a private porch, bedroom with sitting area and open fireplace, a walk-in wardrobe and bathroom. Eight of them are outlying, the three other are housed in the main lodge, which also boasts a spacious lounge, dining and living areas with views of the lake. A magnificent spa with pool, sauna and fitness centre all combine to make this the ideal retreat, just seven minutes from Queenstown.
A dirt track wends its way through the heart of the vineyard to the old farm outbuildings. The restaurant occupies elegantly restored stables overlooking the wine cellar. The roof and solid stone walls have been preserved and offer an authentic backdrop to Chef Lachlan Colwill’s cuisine. He was brought up in Barossa Valley, but then travelled the world over before returning to his native land to serve modern Australian cuisine, based on local ingredients designed to match the estate wines: freshly-picked salad accompanied by red tuna and chicken livers, squid with a rustic blend of leeks, linseed and sorrel.
A great circle of steel sculpted by local artist Greg Johns is a focal point at the entrance to the hotel and restaurant. Behind it, a collection of contemporary limestone buildings merges into the countryside. The Louise, atop a gentle hill in the middle of Syrah vineyards, has all the charm of a boutique hotel with elegantly designed suites nestled in the heart of the Barossa wine valley. You can admire the sun set over vineyards, enjoy a delightful outdoor shower, meet the wildlife at ‘breakfast with the kangaroos’ and in between these peaceful activities, taste world-class wines which go beautifully with the highly renowned cuisine at Appellation, the hotel’s restaurant.
