Au cœur de la station balnéaire la plus exclusive d’Uruguay, entre forêts de pins et plages de sable fin, le chef Jean-Paul Bondoux a recréé un coin de sa Bourgogne natale. Sa « patte » : une cuisine française authentique agrémentée des produits de sa propre ferme. « Ma cuisine est proche de la terre. J’aime le thym, le laurier, la sauge, le romarin, l’ail, l’oignon, la tomate… tout ce qui vient du sol ». Ses « fleurs de courgettes farcies à la volaille et huile vierge » ou son « gigot d’agneau rôti aux herbes du jardin » sont de grands moments de plaisir et de fraîcheur.
