Founded in 1852 by Delmonico’s master chef, Louis Fauchère, and run by his descendants until closing in 1976, the hotel’s extraordinary culinary legacy was reclaimed in 2006 after a meticulous five-year restoration. Two restaurants, a pâtisserie, 16 superbly-restored guest rooms (marble baths, heated towel racks, Kiehl’s amenities, Frette linens) and adjacent meeting facilities have made the Fauchère a casually elegant destination with exquisite cuisine. The Delmonico Room offers contemporary interpretation of the classics, while the sleek, minimalist Bar Louis - with a giant photograph of Andy Warhol and John Lennon above the bar - features bistro-style cuisine, including Sushi Pizza, its signature dish.
